Strawberry Shortcake Collagen Cupcakes

“Strawberry Shortcake Collagen Cupcake” Recipe:

~The Goods~

  • 2 cups of almond flour

  • ¼ cup collagen powder

  • ¼ tsp pink salt

  • ½ tsp baking soda

  • 2 eggs

  • ½ cup coconut milk

  • ½ cup maple syrup

  • 1 cup chopped strawberries

  • ½ cup of fresh mint for garnish.



~Cupcake Recipe~

Preheat the oven to 350 degrees. Mix the dry ingredients and wet ingredients in two separate bowls. Mix the dry ingredients with the wet ingredients a little at a time until batter forms. Divide the batter evenly in muffin tin and bake for 20-25 minutes.


Let the cupcakes cool for one hour. After cooling, cut each cupcake in half. Top bottom half of cupcake with whipped cream, strawberries, and strawberry sauce. Add the top half of the cupcake. Layer whipped cream, strawberries, and strawberry sauce on top, and garnish with mint.


“Strawberry Sauce” Recipe:

~The Goods~

  • 1 cup frozen strawberries

  • ¼ cup honey

  • Juice of 1 lemon


~Strawberry Sauce Recipe~

Blend 1 cup of frozen strawberries with honey and lemon juice.


“Whipped Cream Recipe” Recipe:

~The Goods~

  • 1 can of refrigerated coconut milk.

  • 1 tbsp maple syrup

  • 1 tsp vanilla

~Whipped Cream Recipe~

Extract the cream from the canned coconut milk. In a stand mixer, whip the coconut cream on high. Fold in the maple syrup and vanilla.
